Smoked Salmon Sushi Bowl


  • 150g smoked salmon
  • 120g white or brown rice
  • 100g broccoli or tender stem broccoli
  • 150g spinach
  • 1 avocado
  • 2 chopped spring onions
  • 2 tablespoons edamame beans

Dressing Ingredients:

  • 1 teaspoon honey
  • 1 tablespoons soy sauce
  • 1 tablespoon teriyaki sauce
  • Dash of wasabi (can use mustard as an alternative)
  • 2 teaspoons lime juice


Step 1

Boil rice as stated on packaging. Drain and stand once finished while you prepare other components.

Step 2

Steam, fry or boil (your preference) broccoli.

Step 3

Mix honey, soy sauce, teriyaki sauce, wasabi and lime juice together and pour ¾ over the rice and mix.

Step 4

Equally divide up the spinach in two separate bowls.

Step 5

Add the rice on top followed by the smoked salmon, chopped avocado, edamame beans and the broccoli.

Step 6

Add the spring onions, chili flakes, chopped seaweed and seeds and use the left-over dressing to finish.

Serve with ginger, soy sauce and a cucumber salad
